Lazy Blueberry Cobbler

As promised, the first of several blueberry recipes using those delicious blueberries that we picked. This also comes with the admission that my family loves dessert style breakfasts. The reality is that something like this blueberry cobbler falls in the same level of healthiness as a muffin or breakfast pastry. It just sounds like you are eating dessert for breakfast. We are also huge fans of strawberry shortcake for breakfast, but that's another day. 

I do have to apologize that I did not get step by step photos this time. 

Ingredients: 

  • 1/4 to 1/2 cup butter

  • 1 cup sugar

  • 3/4 cup flour

  • 2 tsp baking powder

  • 1/8 tsp salt

  • 2/3 cup milk

  • several handfuls of berries. (This was very scientifically measured, of course.)

For this recipe, I chose to bake it in my lovely Polish pottery. This was hugely popular when I lived in Germany and has now found a place in American kitchens. 

Directions:

The original recipe that inspired mine noted that you can create this simple cobbler the "lazy" way by mixing all of the ingredients in your pan and just adding the blueberries on top. So, if you feel inclined, that is an option. However, I like the look of a a nice biscuity crust on top of mine. 

  1. Preheat oven to 350 degrees

  2. Melt the butter.

  3. Combine all of the ingredients, up until the berries, with the butter. Mix to form a dough. If you want to do the "lazy" way, combine it all in the dish that you will use for baking. If you want a prettier version, like mine, then combine in a separate bowl.

  4. Add the berries: I chose to use about 4 handfuls of berries. This will fully depend on your family's tastes. Kristin loved the berries, but it was too much for Jaylene.

    • Lazy way- add them on top of the cobbler dough.

    • Pretty way- add them to the bottom of your baking dish

  5. Sprinkle some extra sugar over the berries for a sweeter taste.

  6. If you did my prettier version, add the dough on top. If you do this version, the dough seeps around the berries and intermixes really well for baking.

  7. Bake at 350 for about a half hour or until dough is turning golden. If you have chosen to use frozen berries, you may need to cook a little longer.

Serve warm. It tastes great with vanilla ice cream or whip cream.
