Mock Chicken Alfredo
I will admit that tonight was the first time that I made this and it was a success. I had already planned to make chicken alfredo for dinner. However, after a busy weekend, I have to also admit that I wasn't in the mood to cook. When I was getting my masters degree, my rice steamer became one of my best friends. A quick and easy way to make dinner. Tonight, I wondered if my rice steamer could make noodles.
Ingredients:
I bag of noodles...whatever style you want
1 cup milk
A large handful of spinach
About 3 cups parmesan cheese (divided)
1 large chicken breast
I stick of butter
This is definitely one of those recipes that you can adapt to your tastes.
Step 1: Put the noodles in the bottom part of the steamer with enough water to cover. I then added a dash of milk.
Step 2: I added one giant handful of spinach leaves.
Step 3: I topped it with 1 cup (or so) of parmesan cheese. We like our parmesan cheese.
Step 4: Add the frozen chicken breast to the steamer tray. I also topped it with the all purpose seasoning that is in the next picture.
Step 5: Cook it using the rice setting. It will take about 20 minutes.
Step 6: Since my chicken breast was really thick, it didn't quite cook all of the way through during the normal rice setting. I cut it up and gave it about 5 more minutes to steam. Since I was going to steam the chicken more, I decided to add to the noodles to make them creamier. I tossed in about 2 more cups of cheese and a stick of butter.
End result: a creamy noodle dish that my girls loved. I topped it with more parmesan cheese. You can never have too much parmesan cheese.
If I had to say how many official servings it made, I would say 6 as it was double what my girls and I were able to eat.
